1. In a medium pan over medium heat, sauté the onions and mushrooms in a drizzle of olive oil until the onion is translucent and the mushrooms are light brown, about 5 minutes. Add the spinach and cook until wilted. Add the canned tomatoes and season with salt, pepper, and red pepper flakes. Continue cooking until the sauce thickens and warms.

2. Add the cooked rigatoni to the sauce and toss to coat.

3. Transfer the pasta to a bowl and season with more salt, pepper, and red pepper flakes to taste.
